What is a Cuffin? It’s a cake or a muffin. In nursery rhyme terms… it won’t turn you into a “puffin.” But it will make you feel a “stuffin.”

It sure tastes naughty. Its texture is soft and decadent like something from a bad-for-your-bod bakery. It’s not dense and whole wheatyish, but surprisingly packs more fiber in each yummy bite than health guru bran bricks.

Single Serve Cuffin Muffin (S): Using a fork, mix 1/3 cup dry mix with 1 egg, 1 tablespoon coconut oil, and 1/2 tablespoon water. Microwave in a mug or small bowl for 85-90 seconds or bake for 12 minutes at 350 degrees. Slice and frost or top with butter.

Single Serve Cuffin Muffin (Fuel Pull Version): Using a fork, mix 1/3 cup dry mix with 2 egg whites, 1 teaspoon coconut oil (you can also leave out the oil), and 1/2 tablespoon water. Microwave in a mug or small bowl for 85-90 seconds or bake for 12 minutes at 350 degrees. Slice and add FP topping of your choice, or enjoy it by itself.

    Cinnamon MIM has always been my favorite but this mix has made it so much easier. Something magical happens when you top it with unsweetened Greek yogurt. This has become a pantry staple!

    I use this mix to make the best pancakes! Use the single serve directions and add just a bit more water to make it spreadable on the skillet. Some whipped cream with gentle sweet and strawberries, and a couple of slices of turkey bacon…it’s just as good as any fancy breakfast in a restaurant!

    I cook the Cinnamon Cuffin in a mug and when using a tall mug, I stir it up after a minute to get the moist bottom on top and microwave it for another 15 seconds. Then I add a tad of butter and zero fat Greek yogurt and mix it all up so it is more like bread pudding. I can’t ever wait long enough to bake it in the oven now that I know how good it is in a minute and 15 seconds. I don’t know how anyone can eat just 1/2 so I always make it for a meal.

    Ok, 2nd attempt at making this and it’s 100% amazing. With any dry mixes, give the bag a good shake before you start baking. Here’s some more tips for the Single Serve Cuffin Muffin recipe on the back of the bag: whisk the egg first in the mug and add the remaining liquids (melt the coconut oil beforehand too) , then add the dry mix. I used a shorter, wider mug this time instead of a standard mug and used 1 1/2 tbsp of water for 90 seconds. My problem last time was most likely the mug I chose too so give this another try if you didn’t like it at first! You can also wait for it to cool down and enjoy it hours later too.

    If you think this mix is just “okay, for a diet food” like I did at first, you HAVE to try “Pearls Ultra Sweet Topping” for the “Single Serve-Cuffin Muffin”. My picky Keto BF loves this muffin with the frosting and can now enjoy the muffin with PB frosting for a total of ~2.5g Net Carb!

    Seriously. It took what I thought was “ok for diet food” and elevated it to “OMG I need to buy more bags of this mix asap”. I love the immediate sweet and familiar Peanut Butter flavor that hits first, then the cinnamon spice from the muffin.

    NOTE: I followed the recipe on the back of the mix for the microwaved version of the Single Serve-Cuffin Muffin in a mug and used “1 1/2 tbsp water” exactly but noticed the website recipe states “1/2 tbsp water”. I had to trim the bottom of the muffin because it was too dense/wet. Next time, I’m going to try with “1/2 tbsp water” and I’m sure I’ll get a 100% amazing muffin too!

    I am wondering why the cuffins are so high in carbs compared to the baking blend? It seems like they should be similar but they are not. They are delicious, however!

      To calculate net carbs, subtract the fiber and sugar alcohols from the total carbs. The cuffin mix has 1g net carbs per serving.

    After reading all the positive reviews, I was excited to get my cuffin mixes. I have tried the cinnamon so far in a mug muffin. It was overpowering with cinnamon, and I could taste the baking soda. It was also quite dry. The next time I used less of the cuffin mix, and made up the difference with THM flour. It wasn’t so overpowering, but it still seemed so dry and again, I could taste the baking soda. I’m wondering if it’s just my taste buds, or if I got a batch that wasn’t correct. Haven’t tried to chocolate yet. I think ⅓ cup mix was too much in a mug. Might try just a couple TBSP next time.

      Many ladies like the cinnamon cuffin mix with some caramel extract to balance the flavor. You can cook them in the oven for a great taste and texture. If you are microwave cooking them and they are dry, try reducing the cooking time just a bit.

    I am obsessed with this mix! I have both flavors and have found the cinnamon to be my favored out of the two. I have only used them to make mug muffins; however, this method works for me as I eat on the fly 80% of the time.

    It is amazing!!! I just used it for the first time and made a muffin in a Pyrex dish and it is so moist and tastes wonderful I did not even add anything to it. Just a trimmy on the side. I am having trouble finishing it.
